This easy and delicious Lasagna Soup recipe has all the flavors and comfort of a traditional lasagna, but can be made in a fraction of the time. Perfect for a weeknight dinner, the whole family will love it!

Boil lasagna noodles until right before al dente; they will finish cooking in the soup. Drain and rinse to prevent them from sticking together. Meanwhile, heat olive oil in a large pot and add Laura’s Lean ground beef. Season with 1 Tsp. salt and 1/2 Tsp. black pepper. Break up the meat and cook for 3-5 minutes. Add in onions, garlic, Italian seasoning, and red pepper flakes and continue to cook until the meat is browned and onions are soft, about 5-7 more minutes. Add in tomato paste and cook for 1-2 minutes, then add in crushed tomatoes, chicken stock, and parmesan rind. Season with the rest of the salt and pepper and let cook for another 15-20 minutes until flavors have combined. Add in noodles at the end and add lots of parmesan cheese and fresh basil before serving.
