Make date caramel by adding dates and water to a saucepan and cooking for 5-10 minutes until dates are soft. Drain the dates, reserving the liquid, and place into a food processor with vanilla, salt, and 1 Tbsp. of the reserved liquid. Process until smooth and creamy, adding more water if needed for consistency. Let cool. Slice apples into rounds and gently make a slit at the bottom to insert a popsicle stick, then place onto a baking sheet. Melt chocolate and white chocolate by adding chips to a bowl with 1 tsp. of coconut oil per type of chocolate. Microwave in 30-second intervals, stirring in between until smooth. Spread about 1 tbsp. of the date caramel onto the apple round and then dip or spoon the melted chocolates over the caramel, placing onto the baking sheet to set. While the chocolates are still melty, add sprinkles etc. to your liking. Refrigerate for 30 minutes until chocolate has hardened and then enjoy!
