1. Season the steak liberally with salt and pepper. Let it rest at room temperature for 30 minutes, which helps the steak cook more evenly. 2. Heat the grill to at least 500 degrees Fahrenheit to achieve a nice crust on the outside of the steak. 3. Place the steak on the hot grill. Do not move it once it's on; it should release easily when ready to turn. If not, give it another minute or two. 4. Flip the steak only ONCE (resist the urge to keep flipping!) and leave the lid open. Closing the lid is like baking and can easily overcook the steak. 5. Remove the steak from the grill when your desired doneness is achieved. Let it rest for 5 minutes before slicing.
