1. Use high quality beef. 2. Let the steak rest at room temperature for 30 minutes. 3. Season liberally on both sides with kosher salt and coarse black pepper. 4. Preheat grill to high heat (450-500 degrees). 5. Place steak onto direct heat and do not flip or touch until you are ready to cook the other side. This usually takes 5-7 minutes, depending on the size of your steak and desired doneness (based on a 1"-1.5" thick ribeye). 6. Flip the steak to the other side once it releases from the grill with ease. If it sticks, it means your steak is not ready to be flipped. 7. Cook on the second side for another 5-7 minutes until the internal temperature is 135°F for medium-rare, and around 145°F for medium. Use a meat thermometer if needed. 8. Let your steak rest for 5 minutes before slicing to ensure the juices are redistributed.
