A fun dessert pico de gallo using favorite summer fruits like watermelon, strawberries, and cherries, served with homemade cinnamon sugar tortilla chips. Perfect for snacks or a fun treat.

Preheat oven to 325 degrees. Mix sugar and cinnamon together until combined. Brush tortillas with butter and then sprinkle with about a teaspoon of the cinnamon sugar mixture shaking off excess. Slice tortillas into 4 triangles and then place onto parchment lined baking sheet. Repeat with all of the tortillas. Bake for 10-15 minutes until tortilla chips are lightly golden and crisp. Let cool. In the meantime combine watermelon, strawberries, cherries, lemon juice, and honey and stir to combine. Serve the summer fruit pico de gallo with the cinnamon sugar tortilla chips. Will keep for 2-3 days.
