Blueberry Sangria

This gorgeous blueberry sangria, made with a homemade blueberry simple syrup, dry white wine, vodka, lime, and mint, is perfect to sip on all summer long. It needs to chill for at least 2 hours before serving.

Make blueberry simple syrup by combining blueberries, water, and sugar in a small saucepan and cooking until blueberries start to burst and sugar has dissolved. Strain the syrup and chill. In a large pitcher combine lime juice, wine, vodka, and blueberry simple syrup and stir to combine. Take fresh mint and smack between hands to release the flavor and add to the sangria. Add extra blueberries and lime wedges to the pitcher and let sit in the fridge for at least 2 hours but up to overnight. When ready to serve, add extra blueberries, mint, and lime wedges to glasses and pour the sangria over crushed ice. Top off with sparkling water and serve immediately.
