Spray nonstick skillet with avocado oil and add leftover rice. Spread into a single layer and sauté a few minutes until the rice begins to get crispy, about 5 minutes. Whisk eggs and then pour over the rice and let the eggs set. Season with salt and pepper and add green onions and then fold into omelette shape to continue cooking. Serve with extra green onions and chili crisp to taste.
