A delicious way to spice up your chicken salad game using premium pit-smoked pulled chicken. These smoked chicken salad melts are absolutely delicious and easy to make for weeknight meals, tasting like they were cooking all day without the need to smoke the chicken yourself.

1. Heat @sadlerssmokehouse chicken in the oven at 350 degrees for 30 minutes until warm, wrapped in aluminum foil. 2. Mix chicken, mayo, dijon, lemon juice, bbq rub, salt, pepper, celery, onion, and jalapeño in a bowl and mix until well combined. 3. Spread butter on outside of each piece of bread. 4. On bottom piece of bread (non-buttered side) layer cheese, chicken salad, tomato, pickles, arugula, and pickled onions and then add a second piece of cheese on top. Then add second piece of bread leaving buttered side facing up. Repeat with remaining bread and ingredients until you have 4 sandwiches. 5. Heat a griddle or non-stick pan over medium heat and add sandwiches. Use a heavy bottom skillet like a cast iron skillet to put on top of the sandwiches to press them and ensure cheese melts. 6. Cook until golden brown on bottom and then flip the sandwiches and cook on the other side until cheese has melted and bread is golden brown. 7. Serve immediately.
