In a small saucepan, melt peanut butter, coconut oil, and honey together, then whisk until smooth. Let the mixture cool slightly. While the peanut butter mixture is cooling, combine cereal, oats, chia seeds, and salt in a large bowl. Pour the cooled peanut butter mixture over the dry ingredients and stir until everything is well coated. Press the mixture into a parchment-lined cake pan in one even layer. Place the pan into the freezer for 30 minutes. Once chilled, slice into bars. Store the bars in an airtight container or plastic storage bags and freeze until ready to eat. Best if they remain chilled!
