Leftover Fried Rice

Fried rice is the perfect end of the week dish to make to use up any leftovers that might be hanging out in the fridge. I had some leftover rice, chicken, and broccoli so I decided to turn it into fried rice for dinner tonight. You can really add anything you want to the mix, but I always start with a base of carrot, onion, and garlic and go from there.

-Scramble two eggs and then remove from the pan. -Add in carrots, onion, garlic and sauce until veggies begin to soften and season with a little salt. -Add in leftovers such as chicken, extra veggies etc at this time. -Add in rice and continue to stir to combine ingredients. -Add in 1-2 tbsp of sesame oil and soy sauce to taste and then add in frozen peas to warm through. -Add eggs back in, breaking them up throughout the fried rice. -Top with green onions and serve!
