Easy Chicken Fried Rice

Anytime I have leftover rice hanging out, I will make some version of fried rice because it’s just so good and EASY. I made chicken fried rice with chicken thighs today, but you can use shrimp, chicken breasts, ground meat etc or make it meatless all together. It’s so great for meal prep because it can be eaten at any time of the day so I love having it on hand going into the weekend, especially when it’s a busy one.

-Brown up some diced chicken thighs, remove from the pan and then add in onion, garlic, ginger, and carrots and cook down for a few minutes until carrots begin to get tender. -Add chicken back into the pan along with leftover rice and season with soy sauce and cook for a couple of minutes. -Whisk 2-3 eggs and push the rice mixture to the side of the pan giving you room to scramble your eggs before mixing them into the fried rice. -Add peas in last minute if adding and taste for more soy sauce. -I like to add a little sesame oil at the end and heat through as well and then top with green onions. Feel free to add in whatever other veggies you have on hand into the mix and enjoy!
