A leveled-up version of boxed protein pancakes using Kodiak Cakes mix, Greek yogurt, and other ingredients to make them taste homemade and add extra protein for a fueling breakfast. Perfect for meal prep as they refrigerate and freeze well.

Mix all ingredients together. Place about 1/4 cup of the mix onto a heated griddle with salted butter and cook until fluffy, flipping once. Medium heat is recommended for cooking the pancakes. Serve with butter and syrup, with peanut butter on top, or extra yogurt and fruit. These pancakes also refrigerate and freeze perfectly for meal prep.
