I made this delicious Chicken “Pizza” Skillet on instigate love tonight and it’s such a good one for cooking from your pantry! I chatted all about how you can sub seafood, different cheeses, different types of tomatoes etc based upon what you have on hand currently! This is definitely one of those dinners that you will want to make over and over again. pinch red pepper flake

chicken thigh

tsp anchovy paste

oz fresh mozzarella
oz Crushed Tomatoes

tsp salt & pepper

tbsp olive oil

cup fresh basil leaves

cup onion

clove garlic clove
Preheat oven proof skillet to medium high heat and place chicken in careful not to overcrowd and brown on each side for 3-5 minutes. Remove from skillet and place onto a large plate. Reduce heat slightly and add onion and garlic to the pan along with red pepper flakes and more salt and pepper, sauté for another couple of minutes. Add in anchovy paste and fresh tomatoes and cook until tomatoes start to burst. Pour in canned tomatoes and season with more salt and pepper and add chopped basil. Add chicken back into the sauce and bring to a simmer. Place lid on the skillet and let cook for 15-20 minutes until chicken has cooked through. Place oven on broil and sprinkle mozzarella over top of chicken and sauce and broil for 3-5 minutes until cheese is melty and browned slightly. Sprinkle with more fresh basil and serve immediately.View original recipe
