What you need

tbsp olive oil

tsp black pepper

tbsp fresh cilantro

tsp chili powder

tsp table salt

fl oz avocado oil

tsp honey

cup honeydew melon

tbsp lime juice

Instructions
Measure out two 5 oz. portions of salmon. Rub the salmon down with chili powder, salt, and pepper and then spray the flesh side with avocado oil spray. Heat a cast iron skillet over medium high heat. Once preheated add salmon, flesh side down and cook for 3-4 minutes before flipping to the other side. Cover and let finish cooking another 3-4 minutes until salmon is cooked through. Squeeze Lime Juice over the salmon once its cooked. Meanwhile, make the honeydew cucumber salad by combining honeydew melon, cucumber, jalapeño, and cilantro in a large bowl. Make vinaigrette by combining lime juice, olive oil, honey, salt, and pepper and whisking to combine. Pour the vinaigrette over the salad and toss to combine.
