Easy-to-make, kid-friendly oat bars perfect for a quick breakfast or snack. These no-bake bars combine rolled oats, seeds, plant protein, peanut butter (or other nut butter), dates, and figs, topped with a chocolate drizzle.
1. Add all main ingredients (oats, hemp seeds, chia seeds, protein powder, cacao powder, peanut butter, dates, figs, vanilla extract, 1 tbsp coconut oil) into a food processor.
2. Process until smooth and the mixture just sticks together. If the mixture is too dry, add 1 more tablespoon of coconut oil or peanut butter.
3. Press the mixture into a square cake pan lined with parchment paper until it forms an even layer.
4. Meanwhile, melt 2 tablespoons of dark chocolate and 1/8 teaspoon of coconut oil in the microwave, stirring every 15 seconds until smooth.
5. Drizzle the melted chocolate over the bars in the pan.
6. Freeze for at least 30 minutes to set.
7. Cut into bars and store them in an airtight container in the refrigerator.
