Easy Higher Protein Pancakes are perfect to make once and eat for the rest of the week for easy back to school mornings! I love taking our favorite protein pancake mix and adding even more protein + more flavor by adding a few extra ingredients! This ensures my kiddo will stay full until lunchtime and they are super easy to make!

What you need
egg

tsp baking powder

cup milk

cup olive oil

cup plain greek yogurt

tsp vanilla extract

cup pancake mix
Instructions
Mix all ingredients together until smooth. Let the batter sit for 5 minutes. Heat a skillet over medium heat and then add salted butter. Add pancake batter to the pan and cook on each side until fluffy and brown. At this point serve immediately or store in the fridge or freezer and reheat when needed. You can play around with blueberries or chocolate chips in the batter as well.View original recipe
