These delicious gingerbread blondies are a healthier treat, made refined sugar-free (except for optional snowflakes), with whole wheat flour and almond butter. Perfect for feeding your family a treat you can feel good about.
Preheat oven to 350 degrees. Line a cake pan with parchment paper. Mix together egg, coconut sugar, coconut oil, almond butter, molasses, and vanilla in a stand mixer until smooth and creamy. Mix together whole wheat flour, baking soda, salt, cinnamon, ginger, cloves, and all spices and whisk to combine. Slowly add dry ingredients into wet ingredients and mix until just combined. Fold in white chocolate chips. Press into the cake pan and place into the oven to bake for 20- 25 minutes until a toothpick comes out clean in the center. Let cool completely and then sprinkle powdered sugar over top if desired.
