Instructions
1. Use a nonstick skillet or griddle. (A well-seasoned cast iron pan can also be used.) 2. Coat the skillet with avocado oil, olive oil spray, or butter. This combo helps prevent sticking. 3. Heat the skillet over medium heat. Avoid too low or too high heat to allow egg whites to cook while achieving a crispy edge and desired yolk consistency. 4. For a sunny side up egg: As the whites begin to set, place a lid over the egg to allow steam to finish cooking the egg white, keeping the yolk runny. Season at the end and transfer to a plate. 5. For an over easy egg: Instead of using a lid, gently flip the egg using a thin spatula once the whites have set. Cook for about another minute, then carefully remove to a plate. 6. For an over medium egg: Gently poke the yolk after the whites have set but while the cracked yolk is still runny. Flip the egg and cook for another one or two minutes, resulting in a jammy yolk that is not dry or runny. Alternatively, you can flip without poking the yolk and let it cook for longer. 7.
