Instant Pot BBQ Pork with Apple Jalapeño Slaw Bowls

This is a delicious, easy, and healthy weeknight dinner idea featuring Instant Pot BBQ Pork and a crisp apple jalapeño slaw. The slaw is made with cabbage, Autumn Glory apples, jalapeños, and a honey lime vinaigrette. It pairs perfectly with BBQ pork and can also be served on buns as a sandwich.

What you need

tsp table salt

tsp black pepper

cup apple cider vinegar

lb pork roast

cup fresh cilantro

tsp honey

cup lime juice

tbsp mayonnaise

cup bbq sauce

cup cabbage

jalapeno pepper

cup red apple

tbsp salt
Instructions
1. Season pork with salt and pepper on both sides and then sear in a pressure cooker on all sides. 2. Add BBQ sauce and apple cider vinegar and stir to coat. 3. Place the pressure cooker on and cook for 50 minutes until the pork is tender. 4. While the pork cooks, make the slaw by combining cabbage, sliced Autumn Glory apple, jalapeños, and cilantro in a large bowl. 5. Make the dressing by combining lime juice, apple cider vinegar, honey, mayonnaise, salt, and pepper and whisking until smooth. 6. Add the dressing to the apple slaw and stir to combine. 7. Serve immediately or let the slaw sit for up to 4 hours before serving. 8. Once cooked, shred the BBQ pork and place it in a bowl, then top with the apple slaw to serve.View original recipe
