Leftover Fried Rice

Fried rice is the perfect end of the week dish to make to use up any leftovers that might be hanging out in the fridge. I had some leftover rice, chicken, and broccoli so I decided to turn it into fried rice for dinner tonight. You can really add anything you want to the mix, but I always start with a base of carrot, onion, and garlic and go from there.

What you need

onion

cooked chicken

carrot

tbsp sesame oil

cup cooked rice

bunch green onion

cup peas

pinch salt

clove garlic clove
egg
Instructions
-Scramble two eggs and then remove from the pan. -Add in carrots, onion, garlic and sauce until veggies begin to soften and season with a little salt. -Add in leftovers such as chicken, extra veggies etc at this time. -Add in rice and continue to stir to combine ingredients. -Add in 1-2 tbsp of sesame oil and soy sauce to taste and then add in frozen peas to warm through. -Add eggs back in, breaking them up throughout the fried rice. -Top with green onions and serve!View original recipe
