Mini Twice Baked Potatoes

These miniature twice baked potatoes are the perfect holiday appetizer! They are as adorable as they are delicious, topped with lots of cheese, bacon, and green onions. Sour cream is also a great addition, offering endless possibilities for customization.

What you need

yukon gold

cup shredded cheese

cup milk

tbsp table salt
tsp salt & pepper

tbsp olive oil

cup butter

tbsp green onion
Instructions
Preheat oven to 450 degrees. Poke holes all over each potato and then toss potatoes with olive oil and rub with salt and bake for 45-60 minutes until fork tender. Carefully cut each potato in half and then scoop out the inside leaving a little around each potato skin. Place the scooped potatoes in a bowl and add butter, milk, green onions, and salt and pepper to taste and mash until well combined. Scoop the mashed potatoes back into each potato skin and top with plenty of cheese and sprinkle bacon crumbles on top before placing back into the oven for 15 minutes until cheese is melty.
