Trail Mix Peanut Butter Breakfast Cookies are the perfect thing to prep today and to have on hand for easy breakfasts or after school snacking! They are made with good for you ingredients that will keep you and your kiddos full and satisfied!

What you need

cup peanut butter

banana

tsp ground cinnamon

cup rolled oats

tsp kosher salt

cup applesauce

cup maple syrup

cup carrot

cup nut mix
Instructions
Preheat oven to 325 degrees. Mix banana, applesauce, maple syrup, peanut butter, and carrots in a bowl and stir to combine. Add in oats, salt, cinnamon, and hemp seeds and combine well. Roughly chop trail mix and then fold into batter. Using a cookie scoop or spoon, scoop out cookies onto a parchment lined baking sheet and press down on top to flatten. (Cookies will not spread in oven.) Bake for 8-10 minutes until cookies are cooked through. Let cool. Store in an airtight container for up to a week or in the refrigerator for up to two weeks.View original recipe
