Quick Pickled Red Onions

Pickled red onions are one of my favorite things to keep on hand in my fridge because they are so good on so many different recipes from tacos, eggs, salads, sandwiches, and more! The best part is, they are super easy to make at home with things you probably already have in your pantry!

What you need

cup vinegar

cup water

tsp kosher salt

red onion

tsp table sugar
bunch herbs
Instructions
1. Slice a red onion thin. 2. Fill a mason jar (16 oz recommended) with the onion. 3. Fill the jar halfway with vinegar and the rest of the way with water. 4. Add peppercorns, salt, and sugar and any other herbs or spices that you wish! (Use about 1 Tsp. Kosher Salt and 1/2 Tsp. Sugar for a 16 oz. sized mason jar) 5. Shake the onions and place into the fridge for 2 hours until bright pink. Will keep in the fridge for up to two weeks.View original recipe
