Spiced Peach and Fig Mini Pies two ways

1. In a food processor, combine flour, salt, sugar, and butter. Pulse until it becomes crumbly.
2. Add in 1 Tbsp. of Ice cold water at a time, pulsing it until a dough is formed.
3. Form into a disc and cover with plastic wrap and place in the refrigerator for at least two hours before using.
4. Roll out on wax paper and cut using the circle cutter that comes with the @chicagometallic mini pie set.
5. Place the circles into the mini pie forms.
6. Combine the peach and fig filling ingredients in two separate bowls.
7. Spoon a Tsp. or so of filling into each dough lined mini pie form.
8. Top with the pie dough in shape of choice.
9. Brush tops of pies with egg wash.
10. Bake for 20-25 minutes until golden brown.
11. Serve warm with ice cream if desired.
