What you need

tbsp ground cinnamon
egg

tbsp unsalted butter

cup all purpose flour

cup light-brown sugar

cup sugar

tsp kosher salt

tsp baking powder

tsp vanilla extract

cup avocado oil

cup granny smith apple
Instructions
Preheat oven to 400 degrees. Mix flour, baking powder, salt, sugar, and cinnamon in a large bowl. In another bowl combine egg, vanilla, milk, oil, and grated apple and whisk to combine. Slowly add wet ingredients into dry ingredients until just combined. Make topping by combining flour, brown sugar, cinnamon, and butter in a small bowl using hands to break up butter until it resembles coarse wet sand. Spoon the batter into lined muffin tins until 3/4 full. Top with a the streusel topping covering each muffin. Bake for 18-20 minutes until cooked though. Let cool and serve immediately or store for up to 3 days. Note: The muffins will keep longer if stored in the refrigerator and can be frozen as well.View original recipe
