Instructions
Bring a large pot of water to a boil. While water is coming to a boil combine butter, garlic, basil, 1/2 tsp. salt, and 1/2 tsp. black pepper in a food processor or blender and process until smooth. Alternatively you can finely chop basil and garlic and mix with a spatula. Season the water with plenty of salt when boiling and then add pasta and let cook until al dente. Pat salmon filets dry with paper towels, drizzle with olive oil, and season with 1 tsp. salt and 1/2 tsp. black pepper. Heat a skillet over medium high heat and add salmon skin side down and cook for 4-5 minutes before flipping to the opposite side and cooking for another 4-5 minutes until salmon is cooked through. Squeeze fresh lemon over the salmon to finish and brighten the flavor of the fish. Reserve a cup of pasta water before draining the pasta and then add the pasta back into the pot. Add 2 Tbsp. of the basil butter to the hot pasta along with parmesan cheese and half of the reserved pasta water and stir to coat. Add more pasta water as needed and more basil butter if desired. Serve the salmon on top of the pasta and add extra basil butter to the hot salmon. Add red chili flakes for some heat if desired. Serve immediately.View original recipe
