Lasagna Soup

This easy and delicious Lasagna Soup recipe has all the flavors and comfort of a traditional lasagna, but can be made in a fraction of the time. Perfect for a weeknight dinner, the whole family will love it!

What you need
lb lean ground beef

tsp red pepper flake

tsp table salt

tsp black pepper
oz Crushed Tomatoes

tbsp tomato paste

onion

parmesan cheese

clove garlic clove

tbsp olive oil

cup chicken stock

lb lasagna noodles

cup fresh basil leaves
Instructions
Boil lasagna noodles until right before al dente; they will finish cooking in the soup. Drain and rinse to prevent them from sticking together. Meanwhile, heat olive oil in a large pot and add Laura’s Lean ground beef. Season with 1 Tsp. salt and 1/2 Tsp. black pepper. Break up the meat and cook for 3-5 minutes. Add in onions, garlic, Italian seasoning, and red pepper flakes and continue to cook until the meat is browned and onions are soft, about 5-7 more minutes. Add in tomato paste and cook for 1-2 minutes, then add in crushed tomatoes, chicken stock, and parmesan rind. Season with the rest of the salt and pepper and let cook for another 15-20 minutes until flavors have combined. Add in noodles at the end and add lots of parmesan cheese and fresh basil before serving.View original recipe
