What you need

lb clams

tsp salt & pepper

cup parmesan cheese
cup pasta water

tbsp unsalted butter

cup white wine

cup clam juice

tbsp olive oil

tbsp fresh parsley

clove garlic clove

Instructions
Clean clams thoroughly. Heat a large pot of water over high heat and bring to a rapid boil. Salt water heavily and add pasta. In a large skillet add oil and garlic over medium heat until garlic is just fragrant. Add white wine and let reduce slightly. Add in butter at this time and clam juice and cook another 2-3 minutes. Add in clams and toss to coat and put lid tightly on pan. Don’t remove lid until clams have opened, about 3-5 minutes later. Sprinkle parsley over top and add noodles. Toss to combine. Add parmesan cheese and ladle pasta water if needed for sauce. Sprinkle with red chili flakes and serve immediately. Recycle your cartons.View original recipe
