Hey y’all, it’s Leigh Ann with @mydiaryofus celebrating #FishWeek @eattherainbow_kids with the most delicious Mini Baja Fish Tacos complete with a yummy Fruit Salsa that kiddos and adults alike will gobble right up! Crispy battered cod bites and a delicious fruit salsa make for an epic combo of flavors that are perfect in street tortillas to make mini tacos for tiny hands or they are super fun as an appetizer too! You can swap out any variety of fruits that you love here and if your kiddos won’t like cilantro or red onion, simply omit those ingredients! This salsa is great as a dip as well as a topping for these tacos or any protein!

tbsp baking powder
tbsp cornstarch

cup all purpose flour

lb cod fillet

mango

cup strawberries

tsp table salt

tbsp fresh lime juice

cup club soda

jalapeno

tsp pepper

tbsp fresh cilantro

Mix together batter by combining flour, baking powder, corn starch, salt and club soda and set in the refrigerator for 20 minutes. Make salsa by combining all fruit, lime juice, onion, and cilantro in a bowl and season with salt and pepper and set aside. Cut cod into cubes and then place in to the batter to coat. Meanwhile, add oil to a deep skillet and let come to temperature. It’s hot enough when you can stick a wooden spoon in the oil and bubbles form around the edge. Place the fish carefully into the hot oil and cook on each side for 3-4 minutes until golden brown. Careful not to flip until ready otherwise the batter will come off. Remove the fish when browned and cooked through onto a cooling rack to let excess grease drain off and sprinkle with salt. Char the tortillas slightly and add fish pieces to each tortilla and top with fruit salsa. Serve immediately.View original recipe
